Spaghettieis (German Spaghetti Ice Cream)

A fun German ice cream sundae, Spaghettieis is made with vanilla ice cream in the shape of noodles, topped with a strawberry sauce, and a dusting of white chocolate!

What does Spaghettieis taste like?

Spaghetti Ice Cream is a fun ice cream sundae that you will find at most German Ice Cream shops and it’s delicious but really quite simple. It simply tastes like vanilla ice cream with a fresh raspberry sauce and then optionally some white chocolate on top.

Who invented Spaghettieis?

Dario Fontanella invented spaghettieis as a fun treat for kids in Germany!

Do I have to use Vanilla Ice cream?

Nope! Traditionally it is made with vanilla ice cream for appearance but I know people use anything from pistachio to coffee ice cream; I would not recommend using any ice cream with chunks in it because it will make it too difficult to create the noodle shapes

Tips for making Spaghetti Ice Cream

  • Chill the bowls that you plan to serve it in, in the freezer so the ice cream won’t melt immediately.
  • Even if the ice cream is soft enough to scoop it may still be too difficult to extrude, so if you can’t get it to press through, let the ice cream sit in the potato ricer for a couple minutes before trying again.
  • Prepare the strawberry sauce and any toppings before creating the spaghetti, otherwise the ice cream will melt too quickly.
  • I recommend making these right before serving, you can make them in advance and set in the freezer without the toppings; however, it loses it’s light and noodley texture and becomes a thick block of ice cream.

Ingredients

  • Vanilla Ice Cream: Most vanilla ice creams should work here as well as most other ice cream flavors as long as they don’t have bits/chunks in it.
  • Strawberries: Fresh or frozen strawberries will work for the strawberry sauce.
  • White Chocolate: This is optional and you can’t taste it that much but it does look fun to grate the white chocolate over the top to look like grated parmesan. Be sure to have a bar of white chocolate as chips would be too difficult to grate.
  • Whipped Cream: *Optional, some people will put a pile of whipped cream on the plate before adding the spaghettieis but it is not necessary if you don’t want to.

How to make Spaghettieis?

  • Place the serving bowls or plates on a tray in the freezer.

Make the Strawberry Sauce

  • Pour the fresh strawberries or thawed, frozen ones into a blender with a two tablespoons of water and blend until a thick sauce consistency is made.
  • There is no need to strain the sauce because a little texture will make it look more like traditional tomato sauce.

Make the Ice Cream Spaghetti noodles

  • Scoop slightly thawed vanilla ice cream in a potato ricer or a spaetzle maker.
  • Press the noodles out of your chosen tool over the chilled serving plates. Continue pressing until you have a small pile resembling spaghetti.
  • To break the noodles you can either rotate the tool or use a dinner knife to cut the noodles off.

Assemble

  • Pour the strawberry sauce over the top of the pile of ice cream noodles.
  • Place a couple of fresh strawberries on top.
  • Use a microplane or the smallest wholes on a cheese grater to grate a bar of white chocolate over the top of each plate.

Ingredients

  • 300 grams frozen strawberries thawed, use closer to 450 grams if fresh
  • 1.5 quarts vanilla ice cream
  • 15 grams white chocolate

Instructions

  • Place the serving bowls or plates on a tray in the freezer.

  • Pour the fresh strawberries or thawed, frozen ones into a blender with a two tablespoons of water and blend until a thick sauce consistency is made.

Notes

Spaghettieis is so fun to make, especially in the summer! It’s best eaten right away and you can make the servings as big or small as you want. If it feels impossible to press the ice cream through the potato ricer, let it sit for a few minutes and then try again, it should soften enough that it will still hold it’s shape but be possible to press through.
