The simplest recipe I’ve EVER made, these puff pastry waffles are simply sheets of puff pastry, cooked in a waffle iron. But I couldn’t stop there so I highly recommend rolling them in cinnamon sugar and then smushing two together with a scoop of vanilla ice cream in between.
These came to me as one of those weird thoughts thinking…what if? I think it stemmed from seeing someone make french toast in a waffle iron and now I can’t stop thinking what else I can use a waffle iron for lol. I can’t lie, I kind of thought I was a genius when it worked but it turns out people have made them before…BUT they haven’t rolled them in cinnamon sugar and then turned them into Vanilla Ice Cream sandwiches.
What makes an ice cream sandwich?
I feel like an ice cream sandwich is anything you want it to be as long as it is ice cream smushed between two layers of something else. Usually the other two layers are anything from cookies, to brownies, or even cake but in this case, it’s puff pastry!
Can you roll out Pepperidge Farm puff pastry?
Yes! However, I didn’t when making these and I’m not sure I would recommend it when it comes to making puff pastry waffles. With other recipes where the pastry is being baked in a more traditional manner, I usually roll it out slightly.
Can puff pastry be served cold?
Ok, yes! So once you have assembled the ice cream sandwiches, you’ll probably need to pop them in the freezer until they’re ready to be consumed. Let me tell you, I was shocked at how pleasant the texture of the puff pastry still was after freezing! It really keeps its’ crispy flakiness.
Can these be made in advance?
Yes! If you’ll be having them within a day or two you can simply store the ice cream sandwiches on a tray in the freezer. However, if you want longer term storage, I recommend freezing them until hard and then wrap them individually in plastic and then all together in a freezer bag to prevent freezer burn.

Tips for making Puff Pastry Waffles
- If using frozen puff pastry, be sure to let it defrost before cooking. But don’t let it get too warm, if necessary store the extras it in the fridge while you cook the puff pastry.
- Cook the pastry fully, it can take a while to cook depending on your waffle iron; be sure to let it get crispy before taking it out of the iron.
- Cooking times can vary drastically depending on the waffle iron so I recommend checking after 4 minutes and then every 30 seconds until done.
- Allow the waffles to cool on a wire rack so that they don’t become soggy.
- If assembling into ice cream sandwiches, be sure to eat immediately or store in the freezer until you’re ready!
Ingredients
- Puff Pastry: Frozen Puff pastry or puff pastry made from scratch will work! I always have frozen puff pastry in my freezer for emergency cravings. My two favorites are Pepperidge farm puff pastry and the one from Dufour Pastry.
- Cinnamon Sugar: Simply stir together granulated sugar and ground cinnamon in bowl or jar. I like to mix 200 grams of sugar with 3 tablespoons of cinnamon in a jar and keep it in my pantry.
- Vanilla Ice Cream: You can 10000% use any ice cream for these ice cream sandwiches but for once I kind of love a vanilla ice cream with the cinnamon sugar puff pastry.
How to make Puff Pastry Waffle Ice Cream Sandwiches
Cinnamon Sugar
- In a bowl, stir together 100 grams of granulated sugar with 1.5 tablespoons of ground cinnamon. Set aside.
Puff Pastry Waffles
- Cutting the pastry is dependent on the size of your waffle maker and your puff pastry. I only have this mini waffle maker, so I cut the one sheet of pastry into 9 equal squares. This way one square can be a tester and the rest make an even 4 ice cream sandwiches.
- Defrost your puff pastry and heat the waffle iron. Cut the pastry into your desired size that will fit in the waffle iron, it can go basically all the way to the edges of the waffle imprint.
- Place one sheet on the hot waffle iron and close the iron. Set a timer for 4 minutes and store the rest, covered in the fridge to keep cold.
- After 4 minutes, check the pastry. You want it to be as golden brown as you can get it. Mine took about 5-6 minutes but yours may take more or less time.
- Once cooked, remove the pastry from the iron. If coating in cinnamon sugar, transfer it to a plate or bowl with the cinnamon sugar and toss. Close the waffle iron to let it reheat and then cook the remaining pastry, following the above steps.
Assembling Vanilla Ice Cream Sandwiches
- Immediately after cooking, toss the waffles in cinnamon sugar and then place on a wire rack to cool.
- Allow them to cool completely before assembling.
- Once cooked and cooled, place one large scoop of ice cream onto 4 of the waffles. *If using a full size waffle maker, you can always cut it into quarters or assemble as a giant ice cream waffle cake and then cut.
- Take a second waffle and press it down firmly onto the top of each ice cream scoop until the ice cream squeezes out to the edges.
- Enjoy immediately or place in the freezer on a plate or tray to prevent them from melting.

once the puff pastry is cooked can they be put in the fridge to cool before being assembled or is cooling them out in room temp preferred?
Hi! I recommend letting them cool at room temperature but it doesn’t take long.
