Chocolate Cherry Truffles with Almonds

Dark chocolate, toasted almonds, and soaked dried cherries, basically make these chocolate cherry truffles the best! The toasted almonds add a welcome crunch and nuttiness, AND there is no baking necessary so it's a win win.

Ingredients

  • 150 grams dried tart cherries
  • 3 oz tart cherry juice or rum
  • 150 grams slivered almonds
  • 400 grams dark or semisweet chocolate
  • 1 tbsp flaky sea salt

Instructions

  • Roughly chop the dried cherries into approximately 1/4" chunks.
  • Place in a microwave safe bowl and add the cherry juice or rum. Microwave for 20-30 seconds, then cover and let sit for 1 hour.
  • Toast the slivered almonds in a medium pan over medium heat, stirring frequently. The almonds should become a golden brown color but not burnt. Remove from heat and set aside.
  • Line a baking sheet with parchment paper.
  • In a double boiler, melt the chocolate. Then, stir in the cherries with extra liquid, and almonds.
  • Use a #30 scoop (approx. 2 tbsp) to scoop 12 truffles onto the parchment lined baking sheet.
  • Immediately sprinkle each truffle with flaky salt.
  • Let the truffles set for 1 hour before serving.

Notes

These will keep for at least 1 week in an airtight container at room temperature or in the fridge.
